Coping As A Vegetarian
In the big cities at least, being a vegetarian in the United States presents few problems. Most towns of any size boast at least one wholefood or vegetarian cafe. However, don't be too surprised in rural areas if you find yourself restricted to a diet of eggs, cheese sandwiches (you might have to ask them to leave the ham out), salads and pizza. In the southeast, most soul-food cafes offer great-value vegetable plates (four different vegetables, including potatoes) for around $5, but these are often cooked with pork fat. Similarly, baked beans, and the nutritious-sounding red beans and rice, usually contain bits of diced pork. Of the major fast-food chains, the Mexicanesque Taco Bell , selling good meatless tostadas and burritos, is your best bet.
