Although you can buy its wines anywhere, and there's not much justification for making a detour to visit SANCERRE , a village huddled at the top of a steep, round hill with the vineyards below, there is something appealing about seeing the actual vineyards from which the famous grape has sprung. Sancerre is an extremely dry wine made from the Sauvignon grape; the white is the most renowned, but there are good reds as well, and the rarer rose is exquisite. Around Sancerre are several vignerons , most of them small-scale traditional winemakers. Three you can visit are: M. Raimbault at the Caves de la Mignonne (tel 02.48.54.07.06), on the D955 towards St-Satur on the left; M. Archambault at Caves du Clos de la Perriere, on the D134 in Verdigny-en-Sancerre (tel 02.48.54.16.93), to the west of St-Satur; and M. Laporte at the Cave de la Cresle, on the D57 (tel 02.48.54.04.07), to the northwest of St-Satur. Well suited to the wines is the local crottin de Chavignol , a goat's cheese named after Chavignol , the neighbouring village in which it's made; signs in Chavignol direct you to fromageries open to visitors, where you can sample the cheese. If you're planning to stay in Sancerre, first choice is the Panoramic , Rempart des Augustins (tel 02.48.54.22.44, fax 02.48.54.39.55; 220-300F/?34-46), a lovely hotel with a pool and superb views of the vineyards to the north. There are also two excellent restaurants : La Pomme d'Or , 1 rue de la Panneterie (tel 02.48.54.13.30; closed Mon & Wed evening), with menus from 80F/?12.20; and La Tour , 31 place de la Halle (tel 02.48.54.00.81), with menus from 80F/?12.20.
