You haven't seen Louang Phabang until you cross the Mekong to Xiang Men and climb up to Wat Chompet, a hilltop monastery which offers superior views of the city's gilded temples at sunset. The popular Pak Ou caves trip gets you out on the water, a worthwhile journey if you've not already travelled along the Mekong by boat from Pakbeng. The nearby Kouang Si waterfall is a good spot for splashing around in turquoise waters.
